Overview
Bergamo is the split-into-two town: Bergamo Alta (‘the high Bergamo”) and Bergamo Bassa (“the low town”), joined by the historic cable car. Within the heart of the beautiful Bergamo Alta, we selected the best preparations, capable of presenting in one dish the food culture of the area of Bergamo: from the farmers’ traditional meals to the richly presented meats, to the gelato ‘stracciatella’, which was first created in Bergamo indeed. Escorted by your local foodie, you will discover a secret itinerary enclosed within the walls of the Città Alta, created following strong flavours and delicate scents, starting from the origins of the Lombard tradition and taking us to the contemporary Bergamo food scene that we know today. Here's a list of possible tastings: - Aperitivo with a glass of Valcalepio: the traditional aperitivo Bergamasco, composed of toasted bread slices topped with local garnishments, sided by a glass of Valcalepio red wine, directly from the hills surrounding Bergamo and famous for the sweetness of their products - Casoncelli: It's a handmade pasta, shaped as a half-fool moon, created with a mixture of flours, which can be filled with breadcrumbs, Parmesan cheese, beef meat, pork meat, parsley, raisins, lemon zest and almonds. According to the traditional recipe, the dish is topped with bacon and sage - Foiade: it is the Sunday dish of the local tradition. Every small village around Bergamo has its own type of flour, favourite pasta shape and favourite topping. The foiade are indeed great with different sort of sauce, such as meat, cheeses and mushrooms - Polenta with lard and cheese: the centuries-old dish composed of corn flour, accompanied by local lard slices in order to make the dish creamier or, in alternative topped with savoury cheese from the nearby valleys - Grilled handmade bread with taleggio cheese: a mountain classic, equally delicious in any season, also in the warmer days. A rustic loaf is topped with the local, tasty taleggio cheese and caramelized golden onions - Gelato "stracciatella": stracciatella is one of the most loved gelato flavour in Italy and beyond. Composed of milk and cream, with dark chocolate chips. You'll taste it in the very gelato confectionery where it was invented in the '60s - Espresso coffee: it is the inevitable conclusion of every Italian proper meal. You'll have it in a historic coffee shop
